Sandy's Taco Salad
« on: April 18, 2008, 01:45:23 PM »

 Smiley  Sandy's Taco Salad
I have never made this before, so I am hoping it will work out.
I am winging it as far as the dressing goes. I mixed mayo, sour cream  and a package of taco powder and salsa together for the dressing. It tastes pretty good. I've chopped red, green, yellow peppers and tomatoes, onions, lettuce and a can of red kidney beans(398ml). I mixed broken taco shells in it. I mixed it together with fried crumbled hamburger and I have shredded cheese to put on it as well, so hopefully everything will turn out like it's supposed to. I will let you know the verdict on how it went over after supper.

1/2 cup Mayonaise
1 - 250 ml Sour Cream
I 35 gm package Mild Taco powder
I  430 ml jar Mild Salsa

1 red pepper - chopped
1 Green pepper - chopped
1 yellow pepper - chopped
2 tomatoes - chopped
1 purple onion - chopped
can also use greens from green onions - chopped
Lettuce - chopped
1 can 398 ml Red Kidney Beans
1 pound hamburger- fried, drained and crumbled
1 cup Taco Shells - broken - I used corn chips - broken

I added another 250 sour cream because I found the dressing pretty spicy. I should have only used 1/2 package of  taco powder.

Otherwise everything tasted pretty good, no complaints from Hubby. LOL.

Your salad sounds similar to the one Alicia gave me as a recipe except I baked mine...yours sounds great as a cold "salad" and I bet it was yummy! I think you could easily bake that recipe as well to see the difference in flavor-but you are right about the taco powder-I used too much on my first recipe and it was really strong too!! Did you use taco chips to eat it with?

Smiley I used Tostitos bite size Rounds. which is a a white corn chip, I am thinking that Taco shells broken would have been better, but the salad turned out good, except I should have had more hamburger or less of everything else. Roll Eyes It tasted okay. I imagine it would taste good baked. I like the cold salad as you can make it up ahead and eat it when ever you want.

But that is the great thing about trying it once...you learn and fix the mistakes for the next time. I think your salad would act as a great dip when it is cold..you know what tastes good with the dips? Triscuits-they have a nice thickness to them with a great crunch...OR an idea would be to take your salad and use it as a base for a sandwhich or in a wrap! Either way it sounds like a yummy recipe! Thanks for posting!

That has so many more ingredients than mine!  LOL, I just use beef (prepared with taco powder), lettuce, cheese, broken nacho chips, and ranch dressing.

My cousin made a taco coleslaw at Christmas time.  It was yummy.  I think it was just coleslaw from a bag and doritoes.  Can't remember if it was coleslaw dressing or taco dressing.  Will have to ask her.
